#ilovekale Salad

INGREDIENTS

  • 1

    cup brussel sprouts, quartered

  • 1

    cup cauliflower

  • 1/4

    cup yellow onions, chopped

  • 1/4

    tsp paprika

  • pinch of salt

  • 1

    tsp olive oil

  • 2

    cups (or more) chopped kale

  • 1/3

    cup cooked quinoa

  • 1

    Tbsp walnuts

  • 1/4

    cup cooked lentils

  • Dressing
  • 2

    tsp apple cider vinegar

  • 1

    tsp olive oil

DIRECTIONS

STEP 1: Preheat the oven to 400.
STEP 2: On a baking sheet, add brussels sprouts, cauliflower, onions, salt, paprika, and olive oil. Toss to combine and bake for 20 minutes.
STEP 3: In a large bowl, add kale, quinoa, lentils, walnuts, apple cider vinegar, and olive oil. Toss to combine. Once veggies are done baking, add them to the bowl while still warm and toss. You can make the veggies in advance and save them for the entire week!!
