Blondie Muffins


  • 1

    15oz. can chickpeas, drained and rinsed

  • 1/2

    cup unsweetened almond butter

  • 1/4

    cup maple syrup

  • 2

    tsp vanilla

  • 1/2

    tsp salt

  • 1/4

    tsp baking powder

  • 1/4

    tsp baking soda


STEP 1: Preheat the oven to 350. Spray a muffin tin with coconut oil spray.
STEP 2: Combine all ingredients in a food procesor. If you don't have a food processor, you can use a blender!
STEP 3: Pour batter into the muffin tins and bake for 18-20 minutes or until a toothpick comes out clean.
