What We’re Cookin’ This Week
Right now it’s all about that pantry cooking life! Our simple, go-to option is always Tone It Up Tray Bake Meals! They’re perfect for lunch or dinner, good for the entire family, and make for great leftovers!
Here’s a fajita bake recipe to enjoy—you can use whatever protein you have on hand! Did you know that you can access an entire library of healthy recipes in your Tone It Up app? There’s now a nutrition section that includes recipes and guidelines ~ check it out and let us know what you think!
Makes 2 servings. M3; M5
8 mini sweet bell peppers, stems and seeds removed and cut into quarters
1 poblano pepper, stem and seeds removed, diced
2 ears of fresh corn, kernels cut from the cobb
1⁄4 red onion, cut lengthwise into 1⁄2-inch slices
1 Tbsp. olive oil
1 tsp. Mexican seasoning
Pinch of sea salt
Fresh ground pepper
1 Tbsp. fresh cilantro, chopped
4 oz. prepared lean protein of your choice
1. Preheat oven to 375 degrees.
2. Line a rimmed baking sheet with parchment paper.
3. Place bell peppers, poblano pepper, corn, and red onion on baking sheet. Drizzle with olive oil and toss well to coat. Season with Mexican seasoning, pinch of sea salt, and fresh ground pepper.
4. Bake for 15 minutes or until vegetables are tender and slightly charred.
5. Enjoy with 4 oz. of your favorite protein such as grilled chicken, grilled shrimp, or tempeh.
