White Bean and Mushroom Soup

  • 1

    yellow onion, diced

  • 2

    celery stalks, diced

  • 5

    garlic cloves, minced

  • 2

    tsp olive oil

  • 10

    oz. package mushrooms, sliced

  • 5

    fresh thyme sprigs

  • 1

    can white beans, drained and rinsed

  • 2

    cups kale, chopped

  • 1/2

    tsp salt

  • 4

    cups vegetable broth


STEP 1: In a large pot over medium heat, add 1 tsp olive oil, onions, celery, and garlic. Sauté for 3 minutes.
STEP 2: Add mushrooms and salt. Sauté for another 3 minutes. Add remaining ingredients.
STEP 3: Cook for 15 minutes. Remove thyme sprigs before serving.
