TIU HQ FAVE ~ Avocado Lentil Salad

Inspired by one of our favorite salads from Le Pain Quotidien! We seriously get this ALL the time!! It's light and crunchy, but still keeps you satisfied until dinner time! Plus, it's completely TIU Nutrition Plan approved!

SERVINGS

INGREDIENTS

  • Lentil Avocado Salad
  • 1/4

    cup brown lentils, cooked

  • 1

    carrot, shredded

  • 1/4

    cup chopped radish

  • 1/4

    cup fennel, chopped

  • 2

    cups arugula

  • 1

    Tbsp sunflower seeds, unsalted & shelled

  • 1/4

    avocado

  • 1

    lemon slice

  • 2

    Tbsp garbanzo beans

  • Lemon Dijon dressing
  • 1

    lemon, juiced

  • 1

    Tbsp shallot, diced

  • 2

    tsp dijon mustard

  • 1

    tsp honey

  • 2

    Tbsp olive oil

  • 1

    Tbsp red wine vinegar

DIRECTIONS

STEP 1: Combine all of the ingredients for the dressing in a food processor. Pulse until well combined. This makes 4 servings! Save the extra dressing for up to a week in a covered container in the fridge.
STEP 2: For the salad, combine all ingredients on a plate or in a bowl. Toss with the 1 Tbsp of the lemon dijon dressing then top with a squeeze of lemon!

  4. Thank you so so much for posting this for us! I used to go to Le Pain Quotidien for lunch all the time when I lived in LA and this was my go-to!!! I live on the east coast now and drive a lot for work so I don’t get to stop here very often anymore. I crave this salad all the time and now I can finally make it for lunches on the go! xoxo
