TIU Approved Texas BBQ

One of our favorite parts about traveling is exploring a new city, discovering its unique vibe, and of course tasting the local food ;) Every stop of the Tone It Up Tour has inspired us to try TIU approved spins on the city’s specialty so we whipped up healthy NYC pizza and LA street tacos for you! And now it’s Texas time!! We’re about to leave for Dallas so we’re dreaming of BBQ…what else?!

This week while I was home in Manhattan Beach I spent some time in the HQ test kitchen creating our own Lean, Clean, ‘N Green spin on burgers and coleslaw. The HQ couldn’t get enough of them! The taste test basically became a party so we know these will be perfect at your next get together 🎉

Texas here we come!! You ready for us?! ;)

Coleslaw

Serves 4

Ingredients:

1 cup green cabbage, sliced

1 cup purple cabbage, sliced

1 cup carrot, shredded

1/2 cup red onion, diced

1/2 cup cilantro, chopped

1/2 cup pumpkin seeds

1/4 cup greek yogurt

1/2 tsp. ground cumin

1/2 tsp. paprika

pinch of cayenne pepper

pinch of salt

Directions: 

1. Combine all ingredients in a bowl and toss to combine.

Black Bean Burger

Serves 4

Ingredients:

1 can black beans, drained and rinsed

1 chipotle pepper in adobo

1/3 cup cilantro, chopped

1/4 cup frozen corn, thawed (we used fire roasted corn!)

1/4 cup egg whites or 1 egg

1 cup oat flour

1 tsp. chili powder

1/2 tsp. garlic powder

1/2 tsp. ground cumin

1/4 tsp. salt

1 tsp. olive oil

Directions: 

1. Add black beans, chipotle, and cilantro to a food processor. Pulse for 30 seconds, then transfer to a large bowl. Add all remaining ingredients except for the olive oil and stir to combine.

2. Form 4 equal patties. In a pan over medium heat, add the olive oil. Cook the black bean burgers for about 4 minutes on each side. Transfer to a plate.

3. Serve with your favorite toppings! We love 1/4 avocado and red onions! You can also wrap your burger in a collard greens “bun!”
