The Easiest Slow Cooker Recipes Ever

Hey beautiful! We asked you on Insta recently what you wanted to see more of...and so many of you girls requested crockpot recipes for fall! We're so excited because we have new crockpot meals for comin' for ya in the fall meal plan ~ we'll be releasing it soon! We also want to share some of our all-time fave crockpot dishes. These are seriously so easy — just set it in the morning, go about your day, and voila...you have a delicious dinner ready when you get home! These are all packed with amazing fall flavors and perfect to cozy up with as the weather gets cooler. Enjoy babe! xxo, K&K

Fall Veggie Stew

Makes 4 servings

Ingredients: 

½ onion, diced

2 celery, diced

6 cloves garlic, chopped

1 tsp. olive oil

2 parsnips, chopped

2 carrots, chopped

1 medium sweet potato, chopped

3-5 sprigs fresh thyme

1 tsp. salt

4 cups water

Directions: 

1. Add all ingredients into the crockpot and cook on low for 5-6 hours. Make sure to remove the thyme sprigs before eating!

Butternut Squash, Turkey, & Lentil Chili

Makes 4 - 6 servings

Ingredients: 

Spice mix:

1 ½ tsp. ground cumin

1 tsp. ground cinnamon

1 ½ tsp. chili powder

1 tsp. dried oregano

¼ tsp. chipotle powder

1 tsp. sea salt + more as needed

Chili:

1 Tbsp. coconut oil

1 large onion, finely chopped

4-5 garlic cloves, minced

1 jalapeño pepper, seeded and minced (optional, to taste)

1 lb. lean ground turkey

1 red bell pepper, diced

3 cups diced butternut squash (about ½ large butternut squash)

1 cup dry beluga lentils (or lentils of choice)

28 oz can diced tomatoes (try fire roasted for a smoky flavor!)

1 Tbsp. tomato paste

2 cups vegetable stock

2 Tbsp. pure maple syrup

4-5 leaves lacinato kale, stems removed and finely chopped

Directions: 

1. Mix all the spices together in a small bowl and set aside.

2. Heat coconut oil in a large pot over medium heat. Add the onions and cook until soft and translucent, about 3 minutes. Add the garlic, jalapeño pepper, and spice mix. Mix to coat and then add the ground turkey. Cook turkey until no longer pink. Add turkey mixture to slow cooker.

3. Add the bell pepper, butternut squash, lentils, diced tomatoes, tomato paste, vegetable stock, and maple syrup and stir well.

4. Cook on low for approximately 7 hours or on high for 4 hours.

5. Once chili is done, add finely chopped lacinato kale. Stir to combine and enjoy!

Spicy Mexican Soup

Makes 4 servings 

Ingredients: 

4 cups water

1 can roasted tomatoes

1 can black beans, drained

1 cup fresh or frozen corn

1 red bell pepper, chopped

½ onion, diced

1 Tbsp. chili powder

1 tsp. cumin

1 tsp. salt

1 lime, squeezed

½ cup fresh cilantro

¼ tsp. chili flakes

1 tsp. olive oil

Directions: 

1. Add all ingredients to the crockpot except for the cilantro and cook on low for 4-5 hours.

2. Add cilantro when serving.
