Sweet Potato Casserole

INGREDIENTS

  • 3

    sweet potatoes

  • 1/4

    cup maple syrup

  • 1/4

    cup egg whites

  • 1

    tsp. cinnamon

  • 1/4

    tsp. nutmeg

  • 1/8

    tsp. ground ginger

  • 1/2

    tsp. salt

  • 1

    Tbsp. brown sugar

  • 1/3

    cup finely chopped pecans

  • coconut oil spray

DIRECTIONS

STEP 1: Preheat oven to 375 degrees.
STEP 2: Wrap each sweet potato in tin foil and poke a few holes with your fork. Bake 60 - 90 minutes, depending on the size of your sweet potato. Remove from oven and let cool. Keep the oven on to 375.
STEP 3: Scoop the inside of the sweet potatoes out into a large bowl. With a fork, mash until smooth. Add maple syrup, egg whites, cinnamon, nutmeg, ground ginger, and salt. Stir to combine.
STEP 4: In a casserole dish greased with coconut oil spray, add the sweet potato mixture.
STEP 5: In a small bowl, combine brown sugar and finely chopped pecans. Toss to combine then sprinkle over the top of the sweet potato dish.
STEP 6: Bake for 25-30 minutes. Serve warm.

AUTHOR NOTES

Sweet meets savory with this dish! Nutmeg, ground ginger, and cinnamon provide an earthy fall taste and naturally sweet potatoes up the yum factor. This will definitely be a fan favorite at your table!

  1. I made this yesterday, doubled the recipe as my yams and sweet potatoes were on the smaller side. It was delicious and a big hit! No one would have guessed it was healthy – my boyfriend said, “your food was kick ass!” Thank you Tone it Up for a healthy, delicious recipe!!

  2. YESSS!! I love sweet potatoes they are my fav especially for Thanksgiving :)
    SO glad you girls loved the recipe, I will be trying the recipe for the first time this year! Any thoughts (to save time) instead of using whole sweet potatoes use Trader Joes already mashed sweet potatoes? I had them last year but did not do anything fancy and it came out delish! any thoughts, or recommendations?
