SWEET BRAN MUFFINS!

SG3A0548 Are you pining over decadent, fluffy restaurant-style muffins? We sure are! ? On a quest to recreate a local breakfast fave, we came up with a delicious bran muffin that tastes JUST LIKE the traditional but with a Tone It Up approved twist. We're talking about the same sweet, nutty flavor and rich texture... minus the processed sugar, butter and unhealthy oils. Simply everything you love, that loves you right back.  

SERVINGS

12 muffins/servings

INGREDIENTS

  • 1/2

    cup almond meal

  • 1/2

    cup vanilla Tone It Up Protein

  • 2/3

    cup unprocessed bran

  • 1/4

    cup dark brown or coconut sugar

  • 1

    tsp baking soda

  • 1

    tsp cinnamon

  • 1/2

    cup chopped dates

  • 1

    whole egg (you can also use flax or chia egg)

  • 1

    cup unsweetened applesauce

  • 2

    Tbsp coconut oil

DIRECTIONS

STEP 1: Preheat oven to 350 degrees. Soak dates in hot water for a few minutes to soften. Mix all dry ingredients together and set aside.
STEP 2: Place soft dates in a food processor or blender and process until you reach a paste-like consistency. You may need to soak dates in hot water for a few minutes if they aren't soft before processing.
STEP 3: In a separate bowl, mix all wet ingredients together, including date paste. Stir until fully incorporated.
STEP 4: Spray muffin pan with coconut oil spray. Pour batter until 3/4 full and bake for 18-20 minutes or until a toothpick comes out clean.

    1. I’m wondering the same thing. I thought wheat bran would have gluten (it says they are GF) but I couldn’t find oat bran at the store.

  4. I just made these…. so tasty! :) I used wheat bran because after three stores, I gave up the search for oat bran. And the recipe made 10 muffins (that are pretty small). Thank you for this recipe, I love bran muffins!!

  5. So I just mixed all the wet ingredients together (including the coconut oil), but now I’m reading that you’re supposed to spray the pan with coconut oil. Did I screw up, or is the coconut oil supposed to be included in the mix?

  6. No, the oil def didnt seem right in the mix (it was cold with the applesauce) – luckily I hadn’t stirred so I just pulled the oil wads out. I think I’m doing this right? Thanks for any help!

  7. Is there another alternative to use instead of the applesauce ? I don’t have any :( If not I guess i’ll be going to the grocery store!

  8. And what if we can’t get the tone it up protein? I can’t afford it, I’m 14. Is there another substitute?
