On a quest to recreate a local breakfast fave, we came up with a delicious bran muffin that tastes JUST LIKE the traditional but with a Tone It Up approved
twist. We're talking about the same sweet, nutty flavor and rich texture... minus the processed sugar, butter and unhealthy oils.
Simply everything you love, that loves you right back.
cup almond meal
cup vanilla Tone It Up Protein
cup unprocessed bran
cup dark brown or coconut sugar
tsp baking soda
cup chopped dates
whole egg (you can also use flax or chia egg)
cup unsweetened applesauce
Tbsp coconut oil
Preheat oven to 350 degrees. Soak dates in hot water for a few minutes to soften. Mix all dry ingredients together and set aside.
STEP 2: Place soft dates in a food processor or blender and process until you reach a paste-like consistency. You may need to soak dates in hot water for a few minutes if they aren't soft before processing.
STEP 3: In a separate bowl, mix all wet ingredients together, including date paste. Stir until fully incorporated.
Spray muffin pan with coconut oil spray. Pour batter until 3/4 full and bake for 18-20 minutes or until a toothpick comes out clean.
