Strawberry Shortcake Mini Muffins

We wanted to share one of our absolute faves from the edition with you! Everyone at the HQ is obsessed with these new Strawberry Shortcake Mini Muffins. They’re super simple, perfect for summer with fresh strawberries, and amazing to meal prep and take on the go. And they’re made with clean, plant-based, non-GMO Tone It Up Protein, which boosts your metabolism and helps you form gorgeous, lean muscle 💪🏼

We’ll all be meal prepping them together on Sunday at 2 pm (Cali time!) on Insta. Can’t wait to make these with you!



Strawberry Shortcake Muffin

Makes 18 mini muffins (serving size is 3 mini muffins)


3/4 cup vanilla Tone It Up Protein

3/4 cup oat flour (or almond flour)

1 tsp. baking powder

1 egg or 1 flax egg 

1 tsp. vanilla extract

1 banana, mashed

2 Tbsp. maple syrup

1/2 cup unsweetened almond milk

1/2 cup strawberries, diced

Coconut oil spray


1. Preheat oven to 350 degrees.

2. Combine all dry ingredients in a bowl.

3. In a separate bowl, combine all wet ingredients except strawberries.

4. Add wet ingredients to the dry ingredients and stir to combine.

5. Gently fold in the strawberries.

6. Spray a mini muffin tin with coconut oil spray and add in the muffin batter.

7. Bake for 20-25 minutes or until a toothpick comes out clean. Enjoy babe!

  1. Hey ladies! Quick question:
    When I use fresh strawberries in the TIU baked goods it can sometimes cause them to get soggy.
    Could I use dehydrated strawberries with no added sugars?
    If you have any other tips for this, then feel free to let me know!

    1. Hi babe! They taste amazing with the fresh strawberries! We recommend dicing them small and folding them into the batter at the very end! xxo

    2. You can try tossing the chopped berries in a little bit of the flour before you fold them in, that usually helps a bit!

  4. Is it possible to freeze the muffins as I’m going out of town and was hoping to make them ahead of time.

  5. Just finished them; they came out perfect! I followed everything except substituted apple sauce for banana (1/2 banana = 1/4 cup applesauce) and used homemade almond meal. Love oat flour, but needed to use the almond meal. :)

    I don’t have a mini muffin pan, only a regular one. Can I adjust the temperature/cooking time to fit it?

    1. hi girl! you can make them in a regular muffin pan, no worries! your recipe will make about 6 muffins!! so delicious! xxo 🤗💕✨

        1. I’m having the same issue. I used the regular muffin pan and they came out really soggy in the center. Still great taste but not the best consistency. Any suggestions?

  7. Hi Ladies, can I use anything besides the banana? I do not like them at all and need lower sugar, so applesauce won’t work.

    1. I’ve used plain Greek yogurt, but you’ll want to up the maple syrup since it’s not sweet. :)

  8. Hi Ladies! Can you please let me know if they need to be stored in the refrigerator or not? Also, is it ok to swap with any berries instead of strawberries? I’m sure it’s ok but I still wanted to ask! 🤗 Thank you! So excited for my first official bikini series!

  13. Hi, I can’t get the toneitup protein powder Here in Adelaide and most of your recipes need that, can I substitute with whey protein? I really want to join the bikini series this time but I can never fully join with the recipes that need toneitup protein.

  14. I followed the directions for the recipe but my mini muffins come out wet still. So i cooked them longer and it was still wet inside but burnt on the outside. What am i doing wrong?

    1. I tried making the chocolate strawberry muffins and had the same soggy problem, but I found a fix! I froze the cooked muffins overnight, then each morning microwaved them to heat up. The freezing and microwaving dried out without overcooking. BONUS- the muffins lasted longer DOUBLE BONUS: they felt warm and soft each morning, tasted indulgent & made the kitchen smell amazing.

  20. Hey Babes! This is really random but could you do a post on how to select nutritious cereal? I loved the post you did on the protein bars and the things we can look for to ensure they’re TIU approved and I’d love to see something similar for cereal. I hardly eat cereal anymore because my meals are super nutrient-dense thanks to the nutrition plan but I miss it sometimes or there’s mornings when I’m in a hurry and having a bowl of cereal I love and know my body will too would be fantastic! Thank you in advance!

    I just signed up for the bikini series (I know I may be a little late 😊) and I have a question. If I don’t feel hungry, do I still eat M2 or M4? Also, I work the evening shift, which means I usually go to bed at around midnight or 1am and I sometimes get hungry when I get out of work. What will be something I can eat around that time?

  22. Would it work to use the chocolate flavored TIU protein instead? And if so, would I need to change any other parts of the recipe (I already plan to use the applesauce in place of the banana since I really don’t like bananas)? I’m hoping that they will still turn out okay if I just swap that. Thanks!

    1. Also I saw on one of the IG meal prep stories that someone makes these in a glass pan and cuts them into bars. Any suggestions on what size pan to use if doing it that way?

  23. I made PBJ muffins by substituting in the TUI peanut butter protein powder and adding 2tbsp of organic peanut butter powder. Yummy!!
