Spicy Sesame Zoodles ~ Love Your Body Meal Plan Recipe

Whatcha makin’ for dinner tonight gorgeous?! Lately I’ve been obsessed with these Spicy Sesame Zoodles from the new Love Your Body Meal Plan! This dinner is packed with flavor and it’s so easy to whip up on a busy night! Kat and I love using zoodles as a healthy swap for pasta. Zucchini is full of antioxidants and anti-inflammatory phytonutrients for your gorgeous bod. Pair this dish with a glass of kombucha or wine and you’re set🍷🙌🏻

Spicy Sesame Zoodles
Makes 4 servings
SAUCE
1⁄2 cup almond butter
1⁄4 cup sesame oil
1⁄3 cup low-sodium tamari
1⁄4 cup rice vinegar
2 Tbsp. chili paste (like sambal oelek)
1 Tbsp. honey
1 clove garlic, minced
1 tsp. fresh minced ginger
ZOODLES
1 tsp. olive oil
4-6 zucchini, spiralized or about a 10 oz. package of prepared spiralized zoodles
Salt and pepper to taste
Optional garnish: green onions and sesame seeds
DIRECTIONS
1. In a medium bowl, add all ingredients for the sauce and stir until well combined. Set aside.
2. Coat a medium sauté pan with olive oil over medium heat. Add zoodles and season with salt and pepper. Cook zoodles for about 2 minutes, stirring.
3. Add sauce to zoodles and stir to combine. Cook until sauce is warm and remove from heat.
4. Portion into bowls. Garnish with green onions and sesame seeds. Enjoy!

I made these last Monday with some shrimp for bachelor Monday and they were a hit with my girls and TIU boyfriend, so so good!!

It was a great week for recipes on the plan! Loved the zoodles, loved the Cobb salad (ate it four times this week), and the salmon was so good my husband drank the sauce like it was soup! 🤷♀️😊❤️
After I ran the sauce ingredients through my blender it made around 12 oz of sauce. I added the sauce by the spoonful then tossed the zoodles so they weren’t drenched. I’m happy I can stretch the sauce to 6 servings. This recipe is delicious!
I had a lot of extra sauce too. Thought I messed something up. It was delicious but a little too flavorful so next time I will reserve some for another use.
The TIU team has gone above and beyond with the recipes for this Love Your Body Series 2!! I have never enjoyed my meals more than I have this past week. These zoodles were filling and tasty. I actually sat in my break room audibly saying “mmmm” during every meal I ate at work. And shockingly, I am finally seeing my abs popping out and it’s only been a week!! Did anyone else make these and they turned out SUPER spicy? I have their suggested chili paste but my mouth is on fire!!! I do love these and can imagine them tasting so good with less heat. I would love any suggestions to make them less spicy :)
