12 mini muffins (2 mini muffins per serving)
cup almond meal
cup vanilla Tone It Up Protein
tsp cinnamon, plus extra to sprinkle
tsp baking powder
tsp vanilla extract
cup dates, pitted and soaked in warm water to soften
cup unsweetened almond milk
cup greek yogurt or 1 banana, mashed
coconut oil spray
STEP 1: Preheat oven to 350 degrees.
Combine all of the dry ingredients in a bowl.
STEP 3: Combine all of the wet ingredients, including the dates, in the blender and blend until smooth.
STEP 4: Add wet ingredients to the dry ingredients and mix to combine.
STEP 5: Spray a mini muffin tin with coconut oil spray. Pour batter into the muffin tins. Put into the oven for 20-25 minutes, or until a toothpick comes out clean. Top with a little extra sprinkle of cinnamon.
