Slim Down Scramble
cup diced tomatoes
cup sliced mushrooms
tsp. your favorite seasoning
STEP 1: Spray a skillet with non-stick cooking spray.
STEP 2: Saute spinach and mushrooms with 1⁄4 cup of water on medium heat until the spinach has wilted, the mushrooms are lightly browned and all water has evaporated.
STEP 3: Add tomatoes, then pour egg whites over veggies in the skillet and mix together.
STEP 4: Cook for about three minutes or until eggs have solidified.
