Short Bread Cookie

INGREDIENTS

  • 1/2

    cup almond meal or flour

  • 1/2

    cup vanilla Tone It Up Protein

  • 1/4

    tsp. salt

  • 1/2

    tsp. baking powder

  • 1/4

    cup coconut oil, melted

  • 1

    tsp. vanilla extract

  • 1

    egg

  • 1/4

    cup honey

  • coconut oil spray

DIRECTIONS

STEP 1: Preheat the oven to 350 degrees.
STEP 2: In a bowl, combine all ingredients and mix well.
STEP 3: Lay dough out onto a large piece of parchment paper. Roll dough into a long cylinder, about the length of the parchment paper. Roll up in the parchment paper and freeze for at least 30 minutes.
STEP 4: Cut slices from the cylinder and lay each cookie on a cookie sheet sprayed with coconut oil. Bake for 12 minutes. Let cool for 10 minutes.

  2. I made these shortbread cookies over the weekend with a few modifications (only because it’s what I had on hand). So instead of the vanilla Perfect Fit Protein powder, I used the vanilla latte flavor, and instead of honey, I used maple syrup. They were so good…and so incredibly easy to make!! Thank you for the fabulous recipe!!

  4. Hi!!! Im so excited to try this! Just a quick question: when you say “almond meal or flour” do you mean almond meal or alomd flour? Or do you mean that i can use regular flour or whole wheat flour or oat flour? I’m asking because I dont have easy access to almond meal… do you have any ideas for a good subsitute?

  5. I just made these and they are delicious. I had to modify with what I had on hand. I subbed chocolate tone it up protein for vanilla and maple syrup for the honey then topped with a sprinkle of pink Himalayan salt before baking. Yum!! This recipe is a keeper. Thank you!
