Savory Quinoa Breakfast Bowl

Power up for an amazing day with this savory bowl of goodness. Quinoa is our superstar here, and thanks to sautéed spinach, garlic and herbs, this morning meal also delivers TONS of flavor. With a delicious, sunny side up egg on top, you'll wonder why you don't whip up this bangin' bowl every morning. 

This nutrient morning meal will leave you feelin' oh-so-happy!

SERVINGS

INGREDIENTS

  • 1/2

    cup cooked quinoa

  • 1

    cup fresh spinach

  • 1

    tsp garlic powder

  • 1

    whole egg

  • 1

    small handfull cherry tomatoes, halved

  • 1

    tsp olive oil

  • 1

    sprinkle of your favorite herbs - we used chives & parsley!

  • pinch salt & pepper

DIRECTIONS

STEP 1: Sauté spinach over medium heat with garlic powder and a splash of water.
STEP 2: Add quinoa, cherry tomatoes, salt & pepper to the pan and mix for about 5 minutes until everything is hot. Transfer mixture to a bowl, but keep pan over heat.
STEP 3: Add oil to the pan and cook egg, sunny side up. Once done, serve over quinoa mixture and top with your favorite herbs!

AUTHOR NOTES

We love to make a big batch of quinoa once a week to have on hand for salads, sides and just about anything! Having prepped quinoa on hand makes whipping up this tasty meal a breeze.

    1. Better late than never… I just do a cup of dry quinoa and 2 cups of water. Bring water to boil, pour in quinoa, reduce to simmer for 15 minutes or so and fluff with a fork. Super easy!

  1. Just made this and added in some onion oh my was it good spiced it up with sirracha? yum

    1. I made this this morning and found it a bit bland. Wish I had thought of sriracha!! Great idea! :)

  3. I’m usually a sweet breakfast kind of girl, but this looks awesome! I love quinoa and spinach so I’ll definitely be trying this! I’m actually a breakfast for lunch or supper kind of person so it may slip into a different meal spot as well!
