Nix the traditional sugar and butter base for this tasty dessert! We swapped the high-fat, high-sugar ingredients for pumpkin puree and coconut milk. Even with these nutrient-packed alternatives, the pie is still decadent. MEEE-OW!

    1. You can find canned coconut milk at most local grocery stores along the ‘asian’ aisle.
I would also think container of coconut milk will also work..

    1. I am interested in this answer too. I don’t like coconut milk at all so I would be willing to sub in something else. This recipe sounds really good!

  1. Made this tonight as a “dry Run” before all the family is in town for TG. My pecans were chopped really small so I think it was more like pumpkin pie with a crunch to it. My only suggestion is that next time i will put some pumpkin pie spice. I thought it was fantastic!! TIU you never disappoint on your recipes!! In love with this low sugar, healthy pie!

  2. Hey!! So I made this head of time tonight and was wondering if it will be okay to leave out or does it need to be put in the fridge?

  3. Am I having a brain fart? Do I need to blend the oats at all or just use therm as is?

    1. Hi!
Yes, we processed all of the crust ingredients together in a food processor for 20-30 seconds :)
