Pumpkin Chai Muffins for Cozy Fall Mornings

Sweater weather's got us snuggling up with these muffins...


This scrumptious muffin's got it all... spicy chai tea flavors mixed with the nutrient powerhouse of pumpkin, packaged into a light, fluffy, yummy, and HEALTHY muffin! 8 muffins (1 muffin per serving)


  • 1/4

    cup coconut oil

  • 2

    chai tea bags

  • 1


  • 1/4

    cup coconut sugar

  • 2/3

    cup pumpkin puree

  • 1/4

    cup Pumpkin Spice Perfect Fit Protein

  • 1/2

    cup almond meal

  • 1/2

    tsp. baking soda

  • slivered almonds to garnish (optional)

  • coconut oil spray


STEP 1: Preheat oven to 350 degrees.
STEP 2: Spray muffin tin with coconut oil spray.
STEP 3: Heat up the coconut oil with chai tea in a small saucepan on low heat to infuse oil with chai for 5 minutes.
STEP 4: Combine all dry ingredients in a medium bowl. Add egg with sugar and pumpkin puree and whisk until smooth. Remove tea bags from oil and add infused oil into mixture.
STEP 5: Fill cupcake tins with batter and bake for 20-25 minutes or until toothpick comes out clean. OPTIONAL: Sprinkle muffins with a pinch of slivered almonds!

  5. I have a question for the TIU moms. I’m currently pregnant and am trying to stay away from protein powders in general. What kind of substitutes work in recipes that call for protein powder? So many of their new recipes sound good and I want to try them, but I’m not sure even where to start on switching out the protein powder.

    1. Hi! I personally used this protein powder throughout my pregnancy and had no issues. My OBGYN approved all the ingredients. Remember it’s vegan and there’s no work out supplements added like lots of protein powders have, so there should not be any reason not to use it. Of course, check with your Doc’ ;)

  7. I don’t understand the tea part – are you breaking it apart to infuse with the oil? Are the tea bags sitting in the pot while the oil melts to infuse?

  8. Are there any other recipes for the new Pumpkin Spice protein powder? I tried making it as a shaker drink with just the powder and almond milk. I was not a fan. Is there anything besides muffins i can make with it?

  9. every time I make muffins that are TIU approved, they never fully cook. Any advise?

  10. I made these and they turned into a big crumbly mess. :( I salvaged them a little by pouring some almond milk on top, microwaving them and eating it more like oatmeal. I was really hoping for actual muffins though.
