Ombré Sorbet & Mint Chip Ice Cream


There’s nothing like a sweet, frozen treat on a warm summer day ☀

 Today, we’re sharing two delicious and healthy Tone It Up Nutrition Plan approved ice cream recipes, each one perfect for getting in the summer spirit…


 Days are longer, nights are warmer and, it’s time for fun! What better way to enjoy an evening than with an ice cream social!? There are so many ways to indulge your sweet tooth while staying on track to reach your BIKINI SERIES goals… it’s all about using fresh, naturally sweet ingredients!

These healthy ice cream recipes really hit the spot, and they’re just the thing to whip up this weekend…

Mint Chip Ice Cream

  • 2 frozen bananas (peel, slice & freeze at least 3 hours beforehand)
  • 1 kiwi, peeled & frozen
  • 1/4 Avocado, frozen
  • Handful of fresh mint
  • 1 tsp peppermint extract
  • 1 tsp coconut oil
  • 1 Tbs Cashews, preferably soaked in water for a few hours and drained
  • Splash of coconut water ~ Add just enough to allow mixture to blend


Add all ingredients to food processor or high speed blender and blend baby, blend! Serve immediately or place mixture in the freezer and blend it up again, right before serving. TIP: soaking your cashews beforehand helps give your ice cream a  creamier consistency.

Strawberry Mango Ombré Sorbet

  • 1 cup frozen mango
  • 1 cup frozen strawberries
  • Splash of coconut water
  • Squeeze of lemon

Mango Layer: Add mango & coconut water to the food processor and process until smooth. TIP: Place sorbet in freezer while you blend up the next layer to keep it frozen!

Strawberry Layer: Add strawberries & lemon to the food processor and process until smooth. Layer both sorbet flavors in a  mason jar or glass, garnish and serve!

    Hey girls, any suggestion about what meal number this would be ok for? Or is it more so a treat once you’re focusing more on maintenance than slim down?

      Since both recipes contain fruit, I would say you might either have them with M2 or as M3 as the plan says that it’s better not to eat fruit after 3 p.m. (and I don’t think they have enough protein as a M1 if eaten alone); otherwise you could have them at any time as a treat, since it’s also ok to leave room for ‘wiggle’ once in a while, no? ;-)

    I made the sorbet tonight and it was delicious! Such pretty presentation too – I served it to dinner guests in little mason jars :) I had to add coconut water to the strawberry layer as well because my blender couldn’t handle just strawberries, but it turned out marvelously and I am sure this will be a constant summer staple!

    Question! I made the Mint, and the Kiwi was an overpowering flavor that didn’t seem to go with the mint… What can I substitute for that? And also I made the Sorbet which was AMAZING, but I want to make it for a party :) Can I make it the night before or would it freeze solid? and if it did freeze solid could I just let it sit on a counter for 5-10 minutes and would it be the right consistency?

      I agree that the kiwi is a bit overpowering and doesn’t mix well with the mint. I think I’m going to just use 1/2 a kiwi next time. I plan to use a bit more avocado too as I’m looking for a substitute for bananas (I’m allergic). Hopefully less kiwi will work next time, though it might not be quite the green color that I believe it’s there for.
