NEW Recipe: Warming Slimdown Soup


  • 2

    parsnips, peeled and thinly sliced

  • 1

    cup baby carrots or 2 sliced and peeled carrots

  • 1.5

    cups mushrooms, sliced

  • 2/3

    cup scallions, chopped

  • 3.5

    cups low sodium vegetable broth

  • 1

    cup water

  • 1

    cup chickpeas, rinsed and drained

  • 1

    Tbs. fresh thyme, stems removed

  • 1

    Tbs. fresh rosemary, stems removed

  • 1-2

    garlic cloves, minced

  • 1

    Tbs. olive oil

  • 1

    tsp. sea salt

  • pepper to taste

  • 1

    cup white chicken meat, cooked and shredded (optional)

  • dash of hot sauce (optional)

  • parsley for garnish


STEP 1: Set your Crockpot to high and add all ingredients, oil first and mix well. Allow to slow cook on high for 4-6 hours or on low for 6-8 hours. Serve with extra hot sauce & fresh herbs!


While the skies are mostly blue here in Southern California, the temps have been cool, and we know many of you on the other side of the country are feeling the winter chill! Soup is always a satisfying option for lunch or dinner this time of year. It's also the perfect base for fiber-rich, filling veggies.

        I cooked the chicken until it was about 90% done, sliced it up, and threw it in with everything else in the beginning.

      says “cooked” chicken so cook before! I would just add a little later in the process.

      I have made other slow cooker meals and put raw chicken straight into the pot at the bottom and it turns out so tender and can be shredded straight in the pot with a spoon. I would recommend seasoning the chicken before putting it in.
