NEW Recipe ~ Sweet & Spicy Kale Salad

  • 1

    large bunch of kale

  • 1

    orange, juiced and peeled

  • 1

    Tbs. fresh lime juice

  • 1

    Tbs. extra virgin olive oil

  • 1

    tsp. honey

  • 1/4

    tsp. salt

  • 1

    dash cayenne pepper

  • 1

    garlic clove, finely sliced

  • 2

    tangerines, peeled and sectioned

  • 2.5

    oz. macadamia nuts, crushed or whole

  • 1

    large carrot, grated of chopped

  • 2

    Tbs. raisins


STEP 1: Tear kale off the vein into bite-sized pieces and place in a mixing bowl. Coat leaves with orange and lime juice, olive oil, honey, salt, and a dash of cayenne pepper. Massage leaves in dressing for a few minutes, add garlic and allow mixture to sit for at least 30 minutes or even overnight.
STEP 2: After the kale mixture has marinated, top with remaining ingredients, toss and serve. Enjoy!


Katrina and I have a slight obsession...KALE! We love experimenting with this superfood, and if you're anything like us, you eat kale almost every day! We enjoy it in smoothies, salads, sautés, juices, wraps, soups and we even like making it into chips.

    I love KALE, try this……

    Makes 4 servings

    1 large bunch of kale

    Cilantro, put as much as you like!

    1 Tbs fresh lime juice

    1 Tbs Extra Virgin Olive Oil

    1 tsp honey

    1/4 tsp salt

    1/2 jalapeno pepper

    1 garlic clove, finely sliced

    5 raspberries
    1 Tbs Red wine vinegar
    Blend all above in food processor.
    Toss salad than add below

    2.5 oz almonds, crushed or sliced

    1 large carrot, grated

    2 Tbs cranberries (I like organic ones from Trader Joe’s)

        This salad would also work well with another leafy green like spinach, arugula or baby greens! Just skip the massaging/marinading and serve right away ;)

    Thanks for this recipe, I make a kale salad similar to this that is always a hit at parties!

    Question for K&K though – I suffer from a mild form of hypothyroidism and I recently read that I should actually avoid vegetables in the brassica oleracea family, some of my fav veggies too! I would love for you girls to address this topic with some suggestions since you girls are so creative with your yummy recipes and always offer helpful nutrition tips!

  11. Loved the dressing! I didn’t have kale but I used spinach instead and it was delicious! Definitely will be using this dressing again!

  12. This is so tasty! I’m so happy with how it turned out! I changed it up a little bit and added in cucumbers and strawberries.

  13. Is this supposed to be eaten in one serving? As one meal or broken up into 3 meals?
