Mint Pesto Kelp Noodles

INGREDIENTS

  • Mint Pesto Kelp Noodles
  • 1 1/2

    cups kelp noodles

  • 2

    Tbsp. mint pesto (see recipe below)

  • 1/4

    lb lean ground turkey

  • 1

    pinch salt

  • 1

    pinch pepper

  • coconut oil spray

  • Mint Pesto
  • 1

    cup fresh mint

  • 1/4

    cup pine nuts

  • 1/4

    cup olive oil

  • 2

    garlic cloves

  • 1

    pinch salt

DIRECTIONS

STEP 1: Preheat oven to 350 degrees.
STEP 2: Add a pinch of salt and pepper to the turkey and mix to combine. Spray a cookie sheet with coconut oil spray. Form 1-inch balls with the ground turkey and place on the cookie sheet. Bake for 20-25 minutes.
STEP 3: In a blender or food processor, blend all of the pesto ingredients until smooth.
STEP 4: Spray a pan with coconut oil spray. Heat to medium and toss in the kelp noodles. Sauté for 2-3 minutes, then remove from heat.
STEP 5: Combine 2 Tbsp. mint pesto with the kelp noodles. Top with the turkey meatballs.

AUTHOR NOTES

This is one of my favorite meals right now! I love pesto and anything with garlic. Replacing basil with mint makes this pesto extra fresh and bright! Plus, it's much lower in carbs and calories than it's spaghetti equivalent ;)

  1. I have a spaghetti squash I need to use… Do you think I could substitute that for the kelp noodles? :)

  2. I can’t have olive oil, what type of oil would be a good replacement??

    1. You could use any oil that you like. Olive oil has a stronger taste than canola oil. You may want to use an oil with a stronger taste like grapeseed oil or avocado oil.

  3. Totally love wakeme kelp noodles, delish with some sesame seeds as well :) Always get these when I eat Japanese food.

  4. How much pesto does this make? I was thinking about meal prepping a few servings, I am not sure if I need to multiply the pesto ingredients for all the servings.
