Love Your Body In The Kitchen ~ Strawberry Shortcake Pancakes

Welcome back to the HQ kitchen babe! We have something sweet for you today ~ strawberry shortcake pancakes!! 😋 Protein pancakes are a TIU girl staple and they’ll always be extra special for us because they were the first cooking video we ever did together! And I made them for Karena after a night out celebrating her birthday when we first met. It was love at first bite ;)

The magic of protein pancakes is that you can make them in so many different combos depending on what you’re feelin’ that day and they’re all amazing. Everyooonne loves them…friends, fam, TIU husbands (Bobby is really into the chocolate pancakes!).

Strawberry Shortcake Pancakes

Serves 2

Ingredients:

2 scoops Vanilla Tone It Up Protein

1/2 cup egg whites (or 2 flax eggs – 2 Tbsp. ground flax seed + 6 Tbsp. warm water)

1 banana, mashed

2 Tbsp. almond milk or coconut milk

1/2 cup chopped strawberries

1 tsp. cinnamon

Coconut oil spray

Directions:

1. Mash banana with almond milk before stirring in remaining ingredients. If you’re using a flax egg instead of egg whites, allow the ground flax seeds and water to sit for 1-2 minutes before you add it into the mixture.

2. Spray a pan with coconut oil spray and heat over medium-low before pouring in the batter. Cook for about 3-5 minutes on each side. The key to the perfect protein pancake is to cook it slow and low!

23g protein / 22g carbs / 2g fat / 7g fiber / 198 calories

  1. Does anyone else struggle with the egg free version of TIU pancakes? If you have any tips to making it work, please let me know! I’m usually left with much stuck to the pan!

    1. I agree. Mine usually don’t cook all the way through with egg free version. I would also love to know others tips and tricks on this. Thanks!!

    2. Hi! Yes … same here! I think they need to reniew the vegan version of the pancakes and waffles! Hope they come out with a new version, I always sruggle this lots of stuck in the pan and/or wafflemaker!

  2. I’m also dying to get the egg free/vegan version of the pancakes to work! I’ve been trying since I joined 5 years ago. Some of the vegan versions of the recipes work so well (the coconut macaroons, blondie muffins and the baked apple oatmeal muffins are so amazing) but I still can’t get the pancakes to work. I would love to see a vegan pancake video from you ladies <3 <3 <3

    1. Have you tried aquafaba? (the liquid in canned chickpeas or if you make your own is the liquid where you cook them) I’ve seen baking recipes from minimalistbaker that use it as an egg substitute.

  3. I have had good results using the pancake plates for my waffle iron with the vegan recipe – seems to get them cooked all the the way through because there is heat on both sides :)

  4. I actually just started making the vegan pancakes and made the vegan waffle this morning and it came out great! I used a flax egg in both. When I first tried to make the pancakes I thought the batter was too thick so I added more almond milk- that didn’t work well. The next batch I followed the recipe exactly and it worked, I just needed a lot of patience to wait to flip them. Same for the waffle! It was a thick batter so I just had to spread it on the waffle iron and before closing it shut, I let it cook for a minute or so and then closed and flipped the waffle iron. Also, make sure you’re waffle iron and pancake pan are hot when you add the batter! Hope this helps!

Yeah ive had bad luck with the vegan version as well, flax egg, chia egg, aquafaba.. nothing has worked, these substitutes just dont have the same proteins as egg whites do that holds the recipe together. I have a theory that TIU doesnt actually test some of their vegan recipes using a flax egg. I once had to throw away a whole batch of perfect fit donuts (the old school ones from the TIU cafe vid on youtube) because it most likely was not tested; didnt hold together ..just blobby mess. K + K please do recipe tutorial for vegan pancake <3

  6. I LOVE makingCoffee and PB pancakes : ) My two favorite things combined into one delicious pancake! So Yummy! I love all of the pancakes though…. can’t get enough!

  7. I know this is SO random but where are your rose gold measuring cups from? I know you have straws like them too and they’re so cute! I want to invest! It’ll make cooking and eating even more fun!

  8. This sounds delish! Would I be able to substitute the banana in this recipe with applesauce? Just don’t like the banana taste.

    1. Hi babe! Yes! You can just cut the almond milk down a bit since unsweetened applesauce is thinner than banana. Enjoy!

  9. I’m trying to use up some old protein before I purchase the tone it up protein, how much protein did you use in this recipe (in cups)?

  10. I am having the hardest time flipping the pancakes. I cook them slow and on med-low heat and every time I try to flip the pancake breaks apart!! Does anyone have any tips or tricks to fix this?

  11. Hi made these this morning and they didn’t look anything like yours😂😂. Should have posted a pic(!) I used flax egg this time but even using eggs they never look like yours and I follow the exact measurements in the recipe! Maybe it’s the fire? I have a gas stove top. Btw, I eat them anyway cuz I’m starving after a workout🤣
