Lemon & Chia Superpower Pancakes!

INGREDIENTS

  • 1/4

    cup egg white

  • 1

    scoop Perfect Fit Protein (vanilla)

  • 1/2

    mashed banana

  • 1

    tsp. chia seeds

  • 1/8

    tsp. vanilla extract

  • 1/2

    tsp. baking powder

  • 1

    tsp. lemon zest

  • 1

    Tbs. lemon juice

  • 1

    Tbs. flax meal

DIRECTIONS

STEP 1: Mash banana. Add remaining ingredients and stir until smooth.
STEP 2: Spray a pan with organic non-stick cooking spray, pour in batter and cook over medium-low heat. Once bubbles appear, carefully flip your pancake. Serve with blueberries, additional lemon zest & shredded coconut!

    Hi K&K! I noticed that in the beginning of this post you girls referred to these pancakes as “your weekend morning indulgence”… but I’ve always thought of these pancakes as super healthy and even part of the 7 day slimdown, never as an “indulgence”… are these something we should be eating just once in a while as a treat or something, or is it OK to have these as a daily TIU approved breakfast, even on the slimdown? Thanks you guys!

    I just made these, I didn’t think I would feel full but they were surprisingly filling! I used a tablespoon of buckwheat flour in place of the protein powder to thicken it a bit, and they turned out awesome. These are going to be a staple for me now :) cheers.

  11. I really want to make these but I’m highly allergic to lemon, juice and zest. Is there any alternative I could use not just with this recipe but with others, I usually use grapefruit or lime but never in baking. Any advice would be great as I’m anaphylatic.

    1. Grapefruit actually sounds like a yummy substitute! Even lime sounds good! You could try lime and add a little bit of coconut and pineapple juice (or pineapple pieces) to the actual batter to make tropical type pancake!

  12. Is there a coffee substitute? And is there a specific reason why it’s in the mixture?

  13. Do you have any tips on how to make these? I spray the pan and cook them on medium heat but they always burn and fall apart! They are still delish even if they do t look perfect ?

  15. Any suggestions for not using the perfect fit protein for shakes and pancakes?
    I was unable to have the stevia in the old version and not sure how I will react to the monk fruit sweetener.

  16. I tried to make these last week and the batter just seemed too thick somehow, so I added more almond milk. The pancakes just turned out lumpy and even though they were browned on the outside, they still weren’t cooked all the way through on the inside– NOT fluffy at all. What did I do wrong? Any tips?

  17. I just made these with the new Coconut PerfectFit and they were delish!!!! I added a little (one splash) almond milk and that helped them to come together more and not be so sticky. Definitely a yummy first attempt with the new powder for me!

  18. I made these with lime instead of lemon and I had almond meal instead of flax, and then I mashed some strawberries for topping … BEST TIU pancakes EVER!

  19. These look soo good! But I was wondering how much is a scoop of protein powder? Like in tablespoons.
