Mint Pesto Kelp Noodles
I love pesto and anything with garlic. Replacing basil with mint makes this pesto extra fresh and bright! Plus, you get a noodle dish without all the carbs and calories in pasta. ;)

Black Bean Quinoa Chili
I love making crockpot dishes. I just add all of the ingredients in the morning and by evening, I have a whole week’s worth of meals ready for me! And during the cold weather months, a warm bowl of chili while snuggling under a blankie is the ultimate winter goals.
