K + Kale Salad

INGREDIENTS

  • 4

    cups kale, stemmed and chopped (we love chopping with kitchen shears- so easy!)

  • 2

    bell peppers, chopped

  • 1/2

    red onion, chopped

  • 1/4

    cup pine nuts

  • 1

    small bunch cilantro, remove large stems

  • Lemon Zest Dressing
  • 2

    fresh lemons, juiced

  • 2

    Tbsp olive oil

  • 2

    Tbsp honey or maple syrup

  • zest from 1 lemon

  • pinch of himalayan sea salt

DIRECTIONS

STEP 1: Add all ingredients in a bowl and toss to combine!
STEP 2: You can top with any lean protein or enjoy as a side salad!
