Healthy Super Bowl Nachos For The Win!



Trying to stay TIU approved on Super Bowl Sunday?! Girl, you KNOW we've got you!! Super Bowl parties can be really tricky to navigate while eating lean, clean, 'n green. Chips, buffalo wings, hot dogs...they're all there! Bringing your own healthy option to share with the party is the best way to ensure that you'll have a treat you can enjoy, too! Today we're bringing you nachos. YUP. Healthy nachos. We're obsessed! We even made a brand new, totally delish spicy guacamole recipe to go with them. Your friends will be huddling around this dish all night. Enjoy!!

PRO TIP: This recipe works really well with a mandolin slicer for extra crispy sweet potato chips, but you can also cut really thin slices with your knife.

  • Nachos
  • 2

    sweet potatoes, thinly sliced

  • 4

    tsp. olive oil

  • 2

    tsp. chili powder

  • 2

    pinches salt

  • 1

    can black beans, drained and rinsed

  • 1/2

    cup green salsa

  • 1/4

    cup cilantro

  • 3

    Tbsp. chives or green onions, diced

  • 2

    Tbsp. red onions, finely diced

  • 1

    jalapeño, cut into thin slices

  • 1/2

    cup guacamole (see below recipe)

  • Hot 'n Spicy Guacamole
  • 2


  • 1/2

    jalapeño, finely diced

  • 3

    Tbsp. cilantro, finely diced

  • 1/2

    lemon, squeezed

  • pinch salt


STEP 1: Preheat oven to 400 degrees.
STEP 2: Lay sweet potato slices on two baking sheets covered with parchment paper.
STEP 3: Drizzle 2 tsp. olive oil, 1 tsp. chili powder, and a heavy pinch of salt on each batch. Toss to coat. Bake for 15 minutes or until it has reached desired crispness.
STEP 4: Put sweet potato chips on a large platter. Add black beans, green salsa, cilantro, chives, red onions, jalapeño, and guac!
STEP 5: Remove the insides of the avocado and mash in a bowl.
STEP 6: Add in remaining ingredients and continue to mash until well combined.
STEP 7: Can be stored for up to 4 days and it makes 8 servings!

  1. This looks delish! Are those just sweet potatoes? Or are they mixed with another “chip” as well – the whiter ones? :) I will definitely be making this along with the Buffalo Cauliflower Bites :)

    1. They are sweet potatoes and yams. If you have a Trader Joe’s, buy a bag of the Murasaki potatoes- they’re the “light” inside chip😊

    2. True sweet potatoes are actually white in color :) yams are orange. A big misconception but they both are sweet! Think thanksgiving, we have candied yams, not candied sweet potatoes. White sweet potatoes are a bit less sweet than yams making them better chips too!

      1. But they are both referred to as sweet potatoes. There’s a ton of varieties in color among both kinds!

  3. These look SO good! I am going to be BACON themed Super Bowl party and I already volunteered to do tempeh bacon because there will be a lot of vegetarians there so I think I will make these and top it with the tempeh :) Yum!

  6. I made the basic version of thi with just guac from whole foods & the sweet potato chips above. So good! Definitely hard to get them crispy – wonder if broiling would’ve made a difference. BUT these were so good and such a nice healthy recipe to add to our party menus.

  7. I made this yesterday and it was AMAZING!!! I skipped the beans to make it whole30/paleo compliant and didn’t add Jalepenos but wow this was sooo good! I brought the rest for lunch today :)

  8. I tried this recipe for a quick thursday dinner with my husband. We love them, but modified the recipe to take out most of the spicy ingredients.
