Green Bean Bake

INGREDIENTS

  • 4

    cups green beans, washed and trimmed

  • 3

    cloves garlic, minced

  • 1

    yellow onion, diced

  • 2 1/2

    Tbsp. olive oil

  • 1/2

    cup diced mushrooms

  • 1/2

    cup whole wheat bread crumbs (or gluten free bread crumbs)

  • 2

    Tbsp. nutritional yeast

  • pinch of salt

  • coconut oil spray

DIRECTIONS

STEP 1: Preheat oven to 375 degrees.
STEP 2: In a large pan over medium heat, add 1/2 Tbsp. olive oil, onions, and garlic. Sauté for 5 minutes.
STEP 3: Add green beans and sauté for 10 minutes.
STEP 4: In a small bowl, mix 2 Tbsp. nutritional yeast with 2 Tbsp. olive oil. Add in bread crumbs and toss to combine.
STEP 5: Pour green bean mixture into a casserole dish sprayed with coconut oil. Top with bread crumb mixture and bake for 10 minutes. Serve hot!

AUTHOR NOTES

This traditional casserole can really rack up the calories with layers of cheese. We swapped in nutritional yeast to lower the calories and boost vitamin B12, while still maintaining the cheesy goodness.
