Fall In Love Kale Salad

INGREDIENTS

  • 2

    bunch kale, chopped (should equal to about 5 cups of chopped kale)

  • 3

    apples, chopped

  • 1/4

    cup dried cranberries

  • 1

    cup cooked whole grain Israeli couscous

  • 1/4

    cup pecans

  • 4-6

    oz. lean protein

  • Dressing
  • 2

    Tbsp apple cider vinegar

  • 2

    Tbsp olive oil

  • 1/2

    Tbsp maple syrup

  • top with perfect fit qionoa crisps

DIRECTIONS

STEP 1: Chop kale and apple. Put into a large bowl. Massage kale to soften it a bit.
STEP 2: Mix all dressing ingredients and stir until blended.
STEP 3: Pour dressing onto the salad and top with the pecans, protein, cranberries, and quinoa crisps.
