Crunchy Caliente Tacos!

Celebrate Cinco De Mayo while staying TIU Nutrition Plan approved with THESE amazing cucumber tacos!! They're perfectly crunchy and pack just the right amount of heat. Make your taste buds and summer body happy with this tasty treat...

    cup black beans

  • 2

    Tbsp. chopped green bell pepper

  • 1

    Tbsp. chopped cilantro

  • 2

    Tbsp. chopped red onion

  • 2

    Tbsp. chopped purple cabbage

  • 2

    Tbsp. chopped romaine lettuce

  • 4

    mushroom caps, chopped

  • 2

    oz. grilled chicken, chopped (optional)

  • favorite spicy salsa

  • 1/2


  • coconut oil spray


STEP 1: Slice the cucumber in half, long way. Using a spoon, scoop out the center part of the cucumber, where the seeds are. (You can save the middle for green smoothies or juices)
STEP 2: In a small pan sprayed with coconut oil, heat the beans, mushrooms, onions, bell pepper and chicken (if using) for 3-5 minutes. Feel free to season with some of your favorite TIU approved seasonings! We love chili powder and cayenne!
STEP 3: Pour the heated bean mixture into the cucumber "tacos". Top with purple cabbage, cilantro, romaine lettuce and your favorite salsa. Garnish with lime.


This recipe is perfect when you feel like eating something crunchy! PLUS it's perfect for Cinco De Mayo celebrations!! ;)


  1. My #tiufiance is Mexican so well be celebrating Cinco de Mayo tonite as taco Thursday. He ❤️S that I buy the fresh lime, cilantro, Bc it makes his tummy happy.
