Coconut Pineapple Muffins

INGREDIENTS

  • 3/4

    cup oat flour or almond flour

  • 3/4

    cup coconut Tone It Up Protein

  • 1

    tsp baking powder

  • 2

    Tbsp unsweetened coconut flakes

  • 1

    egg

  • 1

    tsp vanilla extract

  • 1/4

    cup plain greek yogurt or 1 banana, mashed

  • 2

    Tbsp maple syrup

  • 1/2

    cup unsweetened almond milk

  • 1/2

    cup fresh pineapple diced into small pieces

  • coconut oil spray

DIRECTIONS

STEP 1: Preheat oven to 350.
STEP 2: Combine all of the dry ingredients in a bowl.
STEP 3: Combine all of the wet ingredients in a seperate bowl.
STEP 4: Add wet ingredients to the dry ingredients and mix to combine.
STEP 5: Gently fold in the pineapple so that they're well combined.
STEP 6: Spray a muffin tin with coconut oil spray. Pour batter into the muffin tins. Put into the oven for 20-25 minutes, or until a toothpick comes out clean.
