Cinnamon Fig Muffin

Makes 24 mini muffins, Serves 8 (3 mini muffins per serving)

Ingredients:

¾ cup oat flour

¾ cup vanilla Tone It Up Protein

½ tsp. baking powder

¼ tsp. baking soda

2 tsp. cinnamon

Pinch of salt

2 Tbsp. coconut oil, melted

¼ cup pure maple syrup

1 cup unsweetened almond milk

1 banana, mashed

¼ cup egg whites or 1 egg (or ¼ cup unsweetened applesauce to make it vegan)

½ cup dried figs, diced and stems removed

Coconut oil spray

Directions:

1. Preheat oven to 350 degrees.

  1. 2. Combine all dry ingredients in a bowl. Whisk to combine.

  2. 3. Add all remaining ingredients other than the figs. Stir to combine. Gently fold in the dried figs.

  3. 4. Spray a mini muffin tin with coconut oil. Add batter. Bake for 20 minutes or until a toothpick comes out clean.

  4. 5. Store in a container in the fridge for up to 5 days. Enjoy babe!

    Can’t wait to try some new recipes! I want to buy flour but unsure which type to get that I can use for different recipes. Any suggestions on which is a best all round flour for tiu baking please? Thanks!

      We mostly use almond meal/flour or oat flour. You can use them pretty interchangeably :)

Like if I want to trade in the slim down slaw (not a big fan of coleslaw) what could I use instead??

    1. Absolutely! You can mix and match any recipes from the plan to make it work for you and what you like!😘

  10. I am so excited to finally become an official member!! I was first introduced to you both in my old SELF magazine in college, YEARS ago and fell in love!! I do your work outs on youtube and bought your old love you body dvd and the 28 day book! Butttt as a busy momma of two toddlers i have been reading instagram stories about women who have transformed their entire lives and finally decided what better time then now to start !!!! Day one work out complete and all meals prepped for the first week!!!!

    1. 1/4 cup apple sauce and ‘flax egg’ (1tbs ground flawseeds with 3 tbs of hot water, soak for 5 minutes).

  11. These are delicious, made a batch with dates instead of figs and I’m in love. They made my place smell like cinammony goodness.

    I made these with brown rice flour and raisins and craisins as that’s what I had at the time. So good! I can’t keep my TIU husband out of them. Keep these great recipes coming!

    I made the coconut macaroons and they turned brown. Is this normal? Also, what happened to the community message boards?

  14. I used liners instead of spraying the tin. Now I have 36 muffins! 😅 They taste really good so I’m not complaining!
