Chopped + Crunchy Veggie Summer Salad

One of our favorite things to do during the summer is walk around the Farmers Market to browse through seasonal fruits and veggie stands for some new recipe inspo. The amazing thing about summer time (other than the beach, the weather and bikinis of course!) is how unbelievably fresh the produce is!
We took this idea into our kitchen and made a chopped veggie salad! It's crunchy, delicious and filled with a rainbow of colors! This recipe is perfect to bring on a hike or picnic since these veggies maintain their crunch even when packed for later.
Plus, you're getting a hearty dose of fiber and protein to keep you satisfied all the way till dinner time!

- Chopped Salad
cup asparagus, chopped
cup red and orange bell pepper, chopped
Tbsp fresh corn
Tbsp fresh basil, chopped
oz grilled tofu, chicken or fish
- Lemon Dijon Dressing
Tbsp champagne vinegar
Tbsp olive oil
tsp dijon mustard
pinch of salt
