Chopped + Crunchy Veggie Summer Salad

One of our favorite things to do during the summer is walk around the Farmers Market to browse through seasonal fruits and veggie stands for some new recipe inspo. The amazing thing about summer time (other than the beach, the weather and bikinis of course!) is how unbelievably fresh the  produce is!

We took this idea into our kitchen and made a chopped veggie salad! It's crunchy, delicious and filled with a rainbow of  colors! This recipe is perfect to bring on a hike or picnic since these veggies maintain their crunch even when packed for later.

Plus, you're getting a hearty dose of fiber and protein to keep you satisfied all the way till dinner time!

SERVINGS

1 serving

INGREDIENTS

  • Chopped Salad
  • 2

    cups spinach

  • 1/4

    cup asparagus, chopped

  • 1/2

    cup red and orange bell pepper, chopped

  • 2

    Tbsp fresh corn

  • 2

    Tbsp fresh basil, chopped

  • 1/4

    avocado

  • 4

    oz grilled tofu, chicken or fish

  • Lemon Dijon Dressing
  • 1

    Tbsp champagne vinegar

  • 1

    Tbsp olive oil

  • 2

    tsp dijon mustard

  • 1/4-1/2

    lemon, juiced

  • 1/2

    tsp honey

  • pinch of salt

DIRECTIONS

STEP 1: Combine all of the salad ingredients in a bowl and toss.
STEP 2: Combine all of the dressing ingredients in a jar and shake well. Drizzle over the salad and toss one more time!
STEP 3: You can lightly sauté or steam the asparagus if you don't prefer it raw!

Packed with fiber and protein, this salad will give you energy and keep you satisfied all the way through the afternoon snack attack! As an added bonus, the olive oil helps make fat soluble vitamins E and K more bioavailable for your body to take in!

  2. LOVE these kinds of salads! I’m so lucky to have an orchard / farmer’s market half a KM’s walk down from my house. The produce is fresh, the baked goods are homemade and healthy, and there’s nothing quite like fresh fruit and veggies! YUM! :)
