Cauliflower Tabbouleh

This fresh salad pairs perfectly with our Chickpea Falafel recipe and is TIU Nutrition Plan approved!! We subbed out the traditional grain option in tabbouleh for cauliflower rice to make this recipe even more waistline friendly! falafel_and_cauliflower_tabbouleh_written_recipe

INGREDIENTS

  • Tabbouleh
  • 1

    cup cauliflower rice (grated cauliflower)

  • 1

    cup parsley, chopped

  • 2

    Tbsp. mint, chopped

  • 1/4

    cup green onions, chopped

  • 1

    cup cucumbers, chopped

  • Dressing
  • 1

    lemon, juiced

  • 1

    Tbsp. olive oil

  • 1/4

    tsp. salt

  • 1/2

    tsp. garlic powder

DIRECTIONS

STEP 1: Combine all of the ingredients for the Tabbouleh in a large mixing bowl.
STEP 2: Combine all of the ingredients for the dressing in a smaller bowl or measuring cup. Whisk to combine then pour over the tabbouleh. Toss ingredients.

  1. Just made this for later and it tastes so damn good! Store ran out of mint leaves but I hope to get some so I can add it ? I’ll definitely make this over and over!
