This fresh salad pairs perfectly with our Chickpea Falafel recipe and is TIU Nutrition Plan approved!! We subbed out the traditional grain option in tabbouleh for cauliflower rice to make this recipe even more waistline friendly!
cup cauliflower rice (grated cauliflower)
cup parsley, chopped
Tbsp. mint, chopped
cup green onions, chopped
cup cucumbers, chopped
Tbsp. olive oil
tsp. garlic powder
STEP 1: Combine all of the ingredients for the Tabbouleh in a large mixing bowl.
STEP 2: Combine all of the ingredients for the dressing in a smaller bowl or measuring cup. Whisk to combine then pour over the tabbouleh. Toss ingredients.
