Butternut Squash Soup
cups frozen butternut squash (or fresh, frozen is pre-chopped so it's easier to use)
cups veggie broth
cup chopped onion
cloves chopped garlic
tsp olive oil
tsp dried thyme
pinch of salt and pepper
STEP 1: In a large pot, pour the olive oil in and heat to medium. Toss in the chopped onion, garlic cloves, dried thyme and a pinch of salt and pepper. Saute for a few minutes.
STEP 2: Add in the butternut squash and broth. Turn down heat to a simmer and cook for 20 minutes.
STEP 3: Once cooked, put in a blander and blend until smooth.
