So we created a brand new totally 7DSD approved Coconut Macaroon just for you. We used our clean, plant-based, non-GMO Tone It Up Protein and bananas as the base for a light and fluffy, protein-packed treat! This is going to be your go-to snack next week so prep 'em Sunday and get ready to fall in love! You can have these macaroons during the 7DSD for your M2, M4, or as a dessert! If you're swapping them in for one of the M2 or M4s, have 2 cookies. If you want a lil' something sweet after your M5, have 1 cookie as a dessert! ;)

Pro Tip - You can make a batch of these and store in the fridge or freezer! Just reheat when you're ready to eat! ;)

SERVINGS

14 cookies (1 cookie per serving)

INGREDIENTS

  • 2

    bananas, mashed

  • 1

    egg (or 1 flax egg)

  • 1

    cup unsweetened coconut flakes

  • 2

    scoops vanilla Tone It Up Protein

  • coconut oil spray

DIRECTIONS

STEP 1: Preheat oven to 350 degrees.
STEP 2: Combine all ingredients in bowl.
STEP 3: On a cookie sheet sprayed with coconut oil spray, add 2 tbsp. of the mixture to make 14 macaroons. Bake for 13 minutes.

    Which meal are these for? M4? Are these okay to eat after dinner?

    1. Probably with M 1-3 because of the banana? But hopefully Tone it Up will give the definite answer. It does make 14 cookies…how much fruit sugar could you get if you are having one, lol?

      You can leave out the coconut for a vanilla macaroon ;) You can also add in 2 Tbsp. cacao nibs for a chocolate crunch!

      You can try swapping in 1 cup of unsweetened apple sauce. Make sure to first drain the extra liquid from the apple sauce before adding. Let us know how this works!

    1. Hi!
      Mix 1 Tbsp. ground flax with 3 Tbsp. warm water. Allow to sit for a few minutes before mixing into the batter! :)

      The amount of batter depends on the size of the bananas. We used medium sized bananas and got 12 servings, but if you use smaller bananas, you may get less batter.

      Soak 1 Tbsp. ground flax in 3 Tbsp. warm water. Allow it to sit for a few minutes before adding to the batter!

  14. I just made these and they taste amazing!! I used coconut oil on a nonstick baking sheet and they still stuck to the pan quite a bit. I’d suggest using parchment paper and coconut oil. I used a flax egg (1 Tablespoon ground flaxseed mixed with 3 Tablespoons warm water) so that may have had something to do with the sticking. Overall, delicious! Thanks for this recipe, I’ll be making them a bunch :)

  20. Came out a little crispy on the bottom after 13 minutes, but still delicious!! My batter was a little soupy so idk if my protein scoops were quIte big enough, but it gave me 13 cookies so I’m excited! The bf said “it’s more of a ‘health round’ than an actual cookie” but he loved it too!

  22. Not a big fan of coconut or bananas. Any suggestions? Same for the protein pancakes. Tried it with the banana, but all I end up tasting is the banana flavor. Need suggestions for a healthy swap. TIA :)

  23. I’m in NZ and use a different clean protein powder. How much should the protein powder component weigh? Just asking as my scoop may not the same size as your scoop!

  24. I looked on the vegan 7DSD nutrition plan schedule but don’t see this listed on any meals. Where and when can we fit these delicious cookies into the 7DSD?
    (I see pancakes, muffins, and puddings but not these.)

  25. Made a batch and forgot to put them in the fridge!!! So definitely noted in BOLD print in my mind for next time…. lol. :/ Luckily I ate two fresh out of the oven first! :)
