1 Minute Chocolate Chip Cookie

This amazing recipe comes together fast and it’s a whole lot healthier than your standard chocolate chip cookie. It’s gluten free, made with real, body-loving foods, and you can even make it vegan. Oh, and it’s absolutely delicious!

INGREDIENTS

  • 2

    Tbs. oat flour (or flour of choice)

  • 1

    flax egg* OR 2 Tbs. of egg whites

  • 1

    tsp. coconut butter or coconut oil, melted

  • 1/2

    Tbs. baking stevia or coconut sugar

  • 1/8

    tsp. baking powder

  • 2

    tsp. dark chocolate or carob chips

  • dash of cinnamon

  • drop of vanilla extract

  • pinch of salt

DIRECTIONS

STEP 1: Mix all ingredients together until well combined. Spray either a ramekin or plate (make sure they are microwave safe) with organic cooking spray and add batter.
STEP 2: Microwave for 1 minute. For the ultimate treat, serve with berries and banana ice cream… we made our own by blending frozen bananas with vanilla extract :)
STEP 3: * to make a flax egg simply mix 1 Tbs of ground flax seeds with 3 Tbs of warm water. Allow mixture to sit for a few minutes before adding to batter.

    1. I have done that and it turns out well! It’s a lot sweeter though, so you probably wouldn’t need the added sugar/stevia :)

  1. Help! I just tried making these 4 different times. They turned out like solid sponges with no flavor. Any suggestions?

    1. Mine did too! I don’t know what I did wrong. My daughter and I ate them with yogurt and they were much better but not exactly what I was looking for!

    1. What kind of flour did you use? I used almond meal. Also if you use egg whites, try liquid egg whites as opposed to cracking an egg and removing the yolk… For some reason liquid egg whites made it turn out better. Finally, I used 1 tbsp of 62% dark chocolate chips and mine turned out delicious! Spongey still? Sorta, but full of flavor!

  3. The recipe says microwave for 1 minute but everyone’s microwave will vary on cooking time. My microwave cookies normally turn out well at about 40-50 seconds. I recommend setting for 40 seconds and check on it, add time if needed.
