This amazing recipe comes together fast and it’s a whole lot healthier than your standard chocolate chip cookie. It’s gluten free, made with real, body-loving foods, and you can even make it vegan. Oh, and it’s absolutely delicious!
Tbs. oat flour (or flour of choice)
flax egg* OR 2 Tbs. of egg whites
tsp. coconut butter or coconut oil, melted
Tbs. baking stevia or coconut sugar
tsp. baking powder
tsp. dark chocolate or carob chips
dash of cinnamon
drop of vanilla extract
pinch of salt
STEP 1: Mix all ingredients together until well combined. Spray either a ramekin or plate (make sure they are microwave safe) with organic cooking spray and add batter.
Microwave for 1 minute. For the ultimate treat, serve with berries and banana ice cream… we made our own by blending frozen bananas with vanilla extract :)
STEP 3: * to make a flax egg simply mix 1 Tbs of ground flax seeds with 3 Tbs of warm water. Allow mixture to sit for a few minutes before adding to batter.
