Louise LOVED these Peanut Butter Mini Muffins! You have to try ’em!
Makes 12 mini muffins (serving size is 3)
1/2 cup vanilla Tone It Up Protein
1/2 cup egg whites
1/4 cup peanut butter
4 Tbsp. almond milk
1 Tbsp. coconut oil
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 cup chocolate chips
Coconut oil pray
1. Preheat the oven to 350 degrees. Spray a mini muffin tin with coconut oil spray.
2. In a bowl, mix all ingredients except chocolate chips until combined. Gently fold in chocolate chips.
3. Pour batter into the mini muffins tins and bake for 13 minutes or until a toothpick comes out clean. Enjoy!
