Sweet & Savory Crock Pot Pumpkin Soup!

INGREDIENTS

  • 2

    cups pumpkin puree

  • 1/4

    cup unsweetened coconut milk

  • 1/2

    cup vegetable stock

  • 2

    sweet potatoes, peeled and diced (optional)

  • 1

    cup carrots, chopped

  • 2

    Tbs. honey or brown sugar

  • 1

    Tbs. coconut oil

  • 1

    tsp. turmeric

  • 1

    tsp. pumpkin pie spice

  • 1

    tsp. cinnamon

  • pinch of salt

  • pinch of allspice

  • pinch of nutmeg

  • 1

    whole clove of garlic

  • tempeh, ground turkey or chicken (optional)

DIRECTIONS

STEP 1: Add all ingredients to your slow cooker (including chicken or turkey, if using). Set it on low to medium heat for 6-8 hours. When you come home, you'll have a warm, comforting pumpkin soup waiting for you!
STEP 2: If using tempeh, warm up and add immediately before serving. Serve with 5 pecans on top!

    This was delicious! I added the sweet potatoes which were optional, and the brown sugar instead of the honey. YUM!! I had this with some Greek yogurt AND I took leftovers with me to work the next day, as this was also yummy cold!! KEEPER!

      What size is your crockpot, Joy? I have a smaller one and am wondering if I halve the recipe.

        Oh wow I’m not sure to be honest, but it’s small. This isn’t a lot of soup. When you have your liquids, you will see that it’s about 4 servings. That fits perfectly in my little slow cooker ;)

    I just made this for one of my work lunches this week and of course I had to taste test. OMG SO YUMMY! I didn’t add any honey as it was sweet enough for me and I put some hot italian turkey sausage in it and a little quinoa. This is definitely going to become a go to soup for me =)

    does anyone know if this can be done on the soup setting of a vitamix. Or does it need that low heat setting
