Healthy, Tone It Up Approved Valentines Day Desserts!

Wow~ we are coming off a whirlwind of last night’s Finale of Toned Up.  We are so grateful for this community and all of your positivity and support through the season. We’ll be sharing a recap of the season including your viewing party photos, check-ins and even more photos from behind the scenes.  Also- thank you everyone for all of your messages to Bravo about Season 2!  Means a lot to us :)

On to Food Friday!!!  These are our favorite Valentine’s Day Treats :) They’re healthy, delicious, Tone It Up approved and there are so many to choose from!

Whether your plans include a cozy night in, a girls night out or a date with someone special ~  having fun, rewarding yourself and enjoying the night is a must! We want to know what you’re up to! Fun little fact ~ my parents met at a pub in San Francisco on Valentine’s Day. Imagine if they had just stayed in and sulked? Over 30 years later, they’re more in love than ever. These are some of  our favorite Valentine’s Day inspired treats! Enjoy…

T♡NE It Up Chocolate Cups

This oh-so-simple dessert is tasty, light and will make quite an impression…

Chocolate Strawberry Cups

Ingredients

  • 1 cup dark chocolate or carob chips
  • 6-10 paper cupcake liners
  • 1-2 cups fresh strawberries or your favorite fruit :) You can also fill them with a scoop of frozen yogurt or ice-cream
  • Non stick cooking spray
Directions
Melt chocolate or carob in a heat proof container, either in the microwave or melting it in a small pan slowly over another larger saucepan filled halfway with water, on low heat. It will melt quickly, so stir, stay there while it’s melting and be careful not to let it burn!
Lightly spray cupcake liners with organic spray before spooning melted chocolate inside. Carefully brush the chocolate mixture inside the liner with a spoon. The layer of chocolate should be thin, but thick enough to hold up, about 1/4″ or less. Take special care on the sides. Place on a plate in the refrigerator or freezer for 30 minutes and allow the chocolate to harden. If you see any thin spot, re-brush chocolate on the liners.
When ready, peel the paper liners to reveal a perfect chocolate cup. Fill with sliced strawberries, your favorite fruit, one scoop of yogurt or ice cream for a special treat :)

Peanut Butter Cups & Coconut Chocolates

We picked up these cute molds from CVS, but you can also get them from Target. They make cute heart shaped ice-cubes too!

Chocolate & Peanut Butter Heart Molds!

You’ll need 70% dark chocolate, peanut or almond butter & unsweetened coconut flakes. These are so easy!!

Melt chocolate in a sauce pan the same way as above. Carefully fill molds halfway with melted chocolate using a small spoon. Next, give the mold a tap on the counter to settle the chocolate and fill any bubbles. Then, place a small drop of peanut butter, almond butter or a pinch of coconut in the center of the hearts. Top with more chocolate – do not fill all the way! We made this mistake and our hearts overflowed! Usually a good thing, but not in this case ;)

Place in the freezer for about 10 minutes :) Serve for that special someone or pack up to bring on your date with your loved one, girlfriend or a family member.

Chocolate Covered Strawberries!

We also made chocolate covered strawberries with the left-over chocolate! Dip strawberries into your chocolate and allow to harden on a plate to put in the refrigerator.

The Original Perfect Fit Chocolate Cake!

Ingredients

  • 1 Banana
  • 2 eggs
  • 1/3 cup coconut oil
  • 1 teaspoon baking powder
  • 1/3 cup Chocolate or Vanilla Perfect Fit Protein
  • 1/3 cup pure maple syrup
  • 1/2 teaspoon salt
  • 1/3 cup unsweetened cacao powder
  • 1/3 cup of strong, cooled coffee or 1/3 cup unsweetened almond milk

Directions

Preheat oven to 350° degrees. Mix all wet ingredients, including banana, together and set aside. Mix dry ingredients in a separate bowl and slowly combine into the wet ingredients, making sure to incorporate fully until adding more. Mix carefully – don’t over-mix! Pour into a small sprayed baking loaf and drizzle about a tablespoon of pure maple syrup on top! Bake for 30-40 minutes, or until a toothpick comes out clean from center.

Sprinkle with Perfect Fit Protein :) Enjoy in moderation, like any treat!

Healthy Chocolate Craving Muffins!

These are perfect if you’re having a carb craving! All these recipes are HEALTHY ~ but remember the desserts above are meant for a treat, a once in a while splurge, or on a special occasion ;)

These muffins, however are a different story! Make these tasty chocolate muffins ANYTIME!!! ;) These work for any meals on the Tone It Up Nutrition Plan, including M4.

Ingredients

  • 1 cup Chocolate Perfect Fit Protein
  • 1/2 cup Egg Whites
  • 3 tbs  cacao nibs
  • 2 tsp organic cocoa powder
  • 2 tbs melted coconut oil
  • 1 tbs cinnamon
  • 3 tsp baking powder
  • 1/4 cup of unsweetened chocolate almond milk
  • *** these are very healthy! If you want to add a little more moisture, add 1/2 of an avocado, 1 more tbs of coconut oil or 1 mashed banana to the batter

Directions

Set your oven at 350° degrees. Spray muffin pan with organic canola oil cooking spray. We used the mini muffin tray. Drop batter into a muffin pan and fill to the top!  We recommend testing a couple to see if you like them ~ if you want them to be more fluffy, add more perfect fit. If you want them to be more moist, add an extra tablespoon of almond milk.

Bake for 10-15 minutes. Cooking time depends on muffin size or if you used the mini tray. Check your muffins with a tooth pick to make sure they’re cooked all the way through. Your tooth pick should come out clean :) Sprinkle Perfect Fit on top. Refrigerate!

    these all look soooo good! i want to make the chocolate cake on vday for my boyfriend and i, but i have a couple questions: i only have one single serving pack of Perfect Fit, so can i use flour to bring it to 1/3 cup? and do you think this can be baked in a cake pan instead of a loaf pan? please answer thank you!! :)

    Does anyone know the serving size on the Healthy Chocolate Muffins? I made it and got 9 regular size muffins…

      I usually plug in the ingredients into calorieking.com and then then figure out how many calories each muffin would be and go from there.
