Sneak Preview: Herbed Salmon!

INGREDIENTS

  • 1

    8 oz salmon fillet

  • 2

    Tbs. olive oil

  • 1

    Tbs. fresh lemon juice

  • 3

    scallions, minced

  • 1/4

    cup fresh dill, minced

  • 1/4

    cup fresh parsley, minced

  • 1/4

    cup white wine

  • salt and pepper to taste

DIRECTIONS

STEP 1: Preheat oven to 425° F. Whisk together olive oil and lemon juice and set aside. Place salmon in a roasting dish, season with salt & pepper before pouring oil and lemon mixture on top. Allow to marinate at room temperature for 10 minutes.
STEP 2: Meanwhile, mix together scallions, dill and parsley in a separate bowl and use to coat salmon. Flip salmon and make sure both sides are generously coated with herb mixture. Pour wine around salmon and roast for 12 minutes, or until the thickest part is almost cooked. Cover dish with foil and allow to sit for 10 minutes before serving.
STEP 3: Serve alongside your favorite lean, clean & green sides!
