Peppermint- Bark-Stack-Tone-It-Up

We love seasonal sweets and one thing we can never say no to this time of year is Peppermint Bark. With a smooth blend of white and dark chocolate and a hint of mint, it’s a delicious and often decadent dessert that gets us in the mood for parties, candy canes and fun!

We’ve been feeling really creative this week, and decided to give a this holiday favorite a healthy twist…and it came out absolutely delicious! It’s gluten free, vegan and very low in sugar. This Tone It Up Nutrition Plan approved Peppermint Bark is great in the afternoons or for dessert.

It’s an amazing source of healthy fats and powerful antioxidants from high quality cacao!

Holiday Peppermint Bark

Layer 1: 

You can do this 2 ways!

Option #1 ~ a little quicker and more ‘chocolatey’ :)

  • 1 12 ounce bag of dark chocolate chips (if you use a chocolate bar, break into small pieces into a pan)
  • 1/2 tsp of Peppermint Extract
  • 1/4 tsp Pink Himalayan or Sea Salt

Option #2

  • 1 and 1/2 cup of coconut oil**
  • 1/2 cup Cacao Powder
  • 8 drops of Vanilla liquid Stevia or 3 packets
  • 1/2 tsp of Peppermint Extract
  • 1/4 tsp Pink Himalayan or Sea Salt

Layer 2: 

  • 3/4 cup coconut butter**
  • 4-6 drops vanilla stevia or 1/2 packet to taste
  • 1 organic Candy Cane, crushed

**Coconut Oil & Coconut Butter are not always interchangeable, but for this recipe you could use the butter instead of the oil for the first layer, but not the other way around ;) See below for more tips! 

Directions

Option #1

Chocolate burns easily!  Pour dark chocolate chips into a small pan on lowest heat.  Continually stir with a wooden spoon until chocolate is melted and shiny.  Usually takes less than 3 minutes. Add Peppermint Extract and Pink Himalayan or Sea Salt to your mix.  Line an 8 x 8 baking dish with a large piece of parchment paper or foil and pour the chocolate mixture inside. If needed, use a spatula to spread out. Place your baking dish in the freezer for at least 15 minutes as you prepare the second layer.

Option #2 Coconut layer option~

Place a medium bowl over a container of hot water and mix together all ingredients for the first layer.  The warm water helps the coconut oil melt and combine with the other ingredients. Mix well until completely smooth. Line an 8 x 8 baking dish with a large piece of parchment paper or foil and pour the chocolate mixture inside. If needed, use a spatula to spread out. Place your baking dish in the freezer for at least 15 minutes as you prepare the second layer.

For the second layer, make sure the coconut butter is soft. If it’s freshly made it will be soft and perfect. If it’s store bought, you’ll need to microwave it for about 1 minute to soften. (Also, be sure to stir it as well. Just like with natural nut butters, the oil can separate). Mix the soft coconut butter with stevia and then pour over chilled and hardened first layer. Sprinkle with crushed candy canes and place back in the freezer for another 5-10 minutes to set. Once solid, use the sides of the parchment or foil to lift out the block. Break into rustic pieces or use a knife to cut desired sized squares. Enjoy right away or store in fridge.

TIP ~ because these ingredients are all natural, this bar must be kept at cool temperatures, otherwise it will melt after about 10 minutes. Once you cut your bars, keep them in a sealed container in your fridge.

Coconut Butter vs Coconut Oil

Unlike coconut oil which is made by pressing the meat from mature coconuts, coconut butter is made by blending dried coconut flakes for long enough to create a sweet, creamy butter! Both add a healthy flavor to recipes and have many different uses. Find raw coconut butter in your health food store; we found it at Whole Foods! You can also easily make your own. Blend an entire package of unsweetened coconut flakes in your food processor or high speed blender for about 5-10 minutes until the flakes turn into a creamy, buttery texture.  It takes a little patience, but the results are delicious!

Tip: Make sure you use the entire bag ~ this recipe does not work well in smaller batches.
