Crock Pot Coconut Chicken Curry




  • 3

    chicken breasts (boneless, skinless)

  • 1

    whole onion

  • 1

    whole bell pepper

  • 1

    6 oz can can tomato paste

  • 1

    14 oz can coconut milk

  • 1.5

    tsp. salt

  • 1

    Tbs. curry powder

  • 1

    Tbs. garam masala

  • you can add onions, tomatoes, mushrooms

  • cornstarch (to thicken, optional)

  • fresh cilantro, chopped


STEP 1: Place the cubed chicken into the slow cooker. Place the rest of the ingredients (except cornstarch and cilantro) into a food processor or blender and mix until smooth. Pour the sauce mixture over the chicken in the slow cooker and mix well.
STEP 2: Cook on low for 6 hours. if it is not thick enough, add some cornstarch mixed with water about 1 hour before serving.

  1. Do you know what meals this is for? M1? M5? And what are the nutrition facts?

  2. I made this tonight and it was delicious. Next time I’ll add some chili pepper and cinnamon plus some more veggies like cauliflower and mushrooms.
