INGREDIENTS

  • Banana Bread
  • 2

    large bananas or 3 smaller ones, mashed thoroughly

  • 1/2

    cup coconut flour

  • 1

    scoop Perfect Fit Protein

  • 1/2

    tsp. baking powder

  • 1 1/4

    tsp cinnamon

  • 1/4

    tsp. nutmeg

  • 2

    Tbs. coconut sugar or stevia

  • 1/2

    cup walnuts, chopped

  • 2

    whole eggs

  • 3

    egg whites

  • 1

    Tbs. coconut oil, melted

  • 2

    Tbs. coconut water

  • pinch of sea salt

  • Garnish
  • 2

    Tbs. almond or peanut butter

  • 1/4

    cup raisins, chopped

  • 1/4

    cup walnuts, chopped

DIRECTIONS

STEP 1: Preheat oven to 375 degrees. Combine Perfect Fit, coconut flour, sugar, baking powder and spices. Mix well. Whisk eggs and coconut oil together in a separate bowl and add to mashed bananas. Combine the wet and dry ingredients, adding coconut water (add a bit more if batter seems too thick) and stirring together until any lumps are gone before folding in walnuts.
STEP 2: Use organic cooking spray to lightly grease two loaf pans or baking dish. Pour batter evenly about 1" inch deep, and bake for 15-20 minutes or until done, if it seems a little mushy, just bake for 3 minute increments until it's dry on the edges.
STEP 3: Transfer bread to a plate. Spread a thin layer of almond or peanut butter on top, and sprinkle with toppings. Allow to cool slightly before cutting into bars.
