BIKINI SERIES™ ♡ Blueberry Zest Muffins!

  • 1/4

    cup coconut flour

  • 1

    packet or scoop Perfect Fit Protein

  • 1

    cup fresh blueberries

  • 3

    Tbs. coconut oil

  • 3

    Tbs. lemon zest

  • 1

    Tbs. lemon juice

  • 1/4

    tsp. baking powder

  • 1/4

    tsp. sea salt


STEP 1: Mix together eggs, coconut oil, lemon juice and zest in a small bowl, either with a hand mixer or blender.
STEP 2: In a separate bowl combine perfect fit, coconut flour, baking powder, salt and mix thoroughly.
STEP 3: Next, combine dry ingredients into the wet batter and mix or blend well until there are no lumps.
STEP 4: Fold blueberries into batter right before pouring into sprayed muffin tins. Bake for 15-20 minutes or until center is cooked.

  1. Hey K&K…The vegan bikini series calls for this in week one however there is no instruction on how to make these vegan. Please let me know if a flax egg will do the trick and what the ratio is.

    1. I just made these with flax seed eggs and had to add a bit more liquid, other than that it turned out well. :-)

      I was wondering if anyone used a sweetener?
