Rosemary Maple Salmon

Ingredients:

3 tbsp pure maple syrup

2 tbsp balsamic vinegar

1 tbsp lemon juice

2 tbsp olive oil

2 tbsp fresh rosemary

4-5oz skinless salmon fillets

Sea salt & black pepper to taste

Preparation:

1.In a small saucepan, combine maple syrup, vinegar, lemon juice, salt & pepper

2.Heat mixture to boiling; reduce heat. Simmer, uncovered for about 5 min.

3.Remove from heat & stir in rosemary

4.Preheat broiler.

5.Place fish on greased rack and brush with half the glaze.

6.Broil 5 minutes.Turn fish over, brush with more glaze.Broil for 3-5 minutes more.

Serving suggestion:Serve on a bed of greens with veggies and use remaining glaze as dressing.
